When I got married and had to start cooking for myself and family, I only knew a handful of meals that my mom had taught me. Most of my new recipes came from my Fashionable Aunt. This is the Waffles Recipe she gave me all those years ago, and it still hasn’t gotten old.
Recipe makes 8-10 waffles.
Only 6 ingredients, 2 bowls, and 1 mixer needed. Oh, and a Waffle-maker!
1 3/4 Cup Flour
1 Tablespoon Baking Powder
1/4 Teaspoon Salt
1/2 Cup Vegetable Oil
1 3/4 Cup Milk
2 Eggs (Separated)
Put flour, baking powder, and salt into a medium-sized bowl; don’t worry about mixing just yet.
Separate the egg whites into a small metal (or non-reactive) bowl and whisk on high-speed until fluffed into soft peaks. Throw the yolks in with the dry ingredients to mix later.
Use the mixer to mix the dry ingredients with the oil, milk, and egg yolks.
Fold in the fluffed egg whites into the batter gently (this will allow a crisp outside and moist interior to the waffles).
Serve with syrup, fruit, etc. & Enjoy!
